Egg and Salmon Sandwich: A quick recipe

Here we are again, preparing a fast and easy to prepare budget meal. Egg and Salmon sandwich is the suited breakfast for on-the-go type of persons like you who needs the energy of a full meal but has only a little time to prepare. 



For about 15 minutes of your busy time, you can actually make a complete snack you can eat while driving or commuting on the way to your workplace or school. Also an ideal recipe for working moms that needs to prepare their children's snack for school before leaving for work.

A power packed meal but lighter than your usual breakfast, no expert skills needed just prepare the right ingredients and your ready to cook a home-made-gourmet-style-meal in your own cooking station.



Smoked salmon goes well with egg whites, stuff it in a  toasted whole-wheat English muffin and you will have a nutritious breakfast, you might want to pair it with your choice of fruit and/or a glass of 100% natural juice, for a more healthy and satisfying meal.



Ingredients:


    1 tablespoon finely chopped red onion
    2 large egg whites, beaten

    1 ounce smoked salmon
    1 slice tomato
    1 whole-wheat English muffin, split and toasted

    1/2 teaspoon extra-virgin olive oil
     1/2 teaspoon capers, rinsed and chopped (optional)
    Pinch of salt

Preparation:
 

Heat olive oil in a small nonstick skillet over medium heat. Add onion and saute', stir it until the onion begins to soften, do this for about 1 minute. Next, add the egg whites, (if you don't know how to separate the whites from the yolk, just follow the method mentioned on making a Leche flan here) salt and capers (if using) and continue cooking, stirring constantly, do this for about 30 seconds or until the egg whites are set.

To prepare the sandwich, just layer the cooked egg whites, smoked salmon and tomato on the English muffin. That's it and you're ready to enjoy your quick but nutritious breakfast.

Salmon is a good source of protein essential for building strong muscles, (more information about salmon here) so does the egg whites fried in extra-virgin olive oil which is good for the heart. A very budget friendly and hassle-free meal ideal for people with hectic schedules but are still health conscious like you.
